Brown Butter Pumpkin Bars
Part cake, part blondie.
Ingredients:
8 ounces (2 sticks) unsalted butter
1 (15-ounce) can pumpkin purée
1 cup granulated sugar
1 cup light brown sugar
2 large eggs
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
1 teaspoon freshly ground nutmeg
1/2 teaspoon ground clove
1/2 teaspoon ground allspice
2 cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
1 cup milk chocolate chips
1 (3-ounce) dark chocolate bar, finely chopped
Directions:
Preheat the oven to 375°F. Line a 9 by 13-inch baking pan with parchment.
In a medium saucepan, melt the butter over medium high heat. Cook, whisking constantly, until browned and nutty in aroma, 5 to 7 minutes. Transfer to a large heatproof bowl. To the butter, whisk in the pumpkin purée and sugars until smooth, followed by the eggs, cinnamon, vanilla, nutmeg, clove, and allspice. Add the flour, salt, and baking soda and fold until just incorporated, then stir in the chocolates.
Scrape the batter into the prepared baking pan and bake for 20 to 25 minutes, until golden and a toothpick inserted into the center comes out clean. Let cool completely, then transfer to a cutting board, slice, and serve!
