Ingredients:
Makes about 1 dozen cookies
1/2 cup light brown sugar
1/2 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon instant coffee or espresso
1 teaspoon kosher salt
1 large egg
1 cup smooth peanut butter
1 cup (135g) all-purpose flour
Directions:
Preheat your oven to 350°F. Line a sheet pan with parchment paper.
In a large bowl, whisk together the brown sugar, maple syrup, vanilla, cinnamon, instant coffee, salt, and egg to combine, then whisk in the peanut butter until smooth. Fold in the flour until just incorporated.
Scoop 3 tablespoon sized balls and roll between your hands to smooth. Place on the prepared pan spaced 2 inches apart and press each ball lightly with a fork to slightly flatten and form a grid.
Bake for 13 to 15 minutes, until the edges and bottoms are lightly golden. Let cool, then serve.
