Quinoa Chicken Salad
No grains, no gains.
Ingredients:
2 cooked chicken breasts (I poach in salted water with bay leaves but you can use roasted or rotisserie chicken too!)
2 cups cooked quinoa
2/3 cup garlic girl mayo (or plain mayo and then just add some grated garlic too)
1/2 cup minced fresh parsley
1/4 cup raisins
2 tablespoons freshly squeezed lemon juice
4 celery stalks, finely chopped
Hot sauce, salt, and pepper
Directions:
In a medium bowl, shred the chicken breasts with two forks. Add the remaining ingredients, then stir to combine. Serve immediately or store in an airtight container in the refrigerator for up to 5 days.
